It's not the beach but we are on the water...a canal that runs from Tampa Bay to Lake Tarpon, the biggest lake in our area. We have a daily show of wildlife...birds, deer, raccoons...and the occasional gator.</span><br />

<span style="font-size: large;">Condo living is better than I ever expected... We love not having to do maintenance and lawn care. Yes, we downsized, but we are actually in a larger place. Having 3 stories to climb each day (several times) is great exercise! It's quiet here, too, yet we are in the middle of "civilization". (We have 8 Starbucks in a 5 mile radius.)</span></td></tr>

<span style="font-size: large;">Once again, I had the privilege of accompanying MacDaddy to The Breakers...one of the oldest and most beautiful resorts in Florida. The original hotel was built by Henry Flagler in the late 1890s. It burned down in 1903...was rebuilt, and burned again. The structure we see today was built by Flagler's family...and was designed to </span></div>

<span style="font-size: large;">never burn down" again. The "new" Breakers has worn many hats...beginning and ending with a luxurious hotel. During WWII, it became a hospital. (Can you imagine saying you were born at The Breakers???)</span></div>

Well, actually, I missed the hatching, but at sunrise, I saw the Turtle Patrol emptying the nest so they could count the hatched eggs... We found 4 little hatchings still in the nest. With gloved hands, the rescuers picked them up, placed then in a cooler, for transport.</div>

The Turtle Patrol dug out the nest, counted the hatched eggs (over 100!), and the "spacers" (unhatched, probably unfertilized eggs), then replaced everything back into the nest and covered it back up. It was a fascinating process...</div>

End of May - traveled to Miami Beach with MacDaddy. I love when I can tag along! We stayed in the W Hotel, right on Miami Beach. We had a beautiful suite with a wonderful view of the ocean and the city of Miami. I love going to south Florida! It's so much fun getting into the car and exploring on my own. There are great restaurants, incredible shopping and interesting museums. (It's a shame that MacDaddy has to work and cannot explore with me.)<br />

June was filled with lots of granddaughter days. Eva and I had "Shammy Tuesdays (and many Thursdays). These days were full of excursions to visit Greatma, visits to The Fresh Market ("to get some peanut butter"), and playtime and clothes at Stellie Bellies. And, of course, we made up songs for each adventure. Gosh, I miss these days!<br />

July (my birthday), MacDaddy took me to Vero Beach and the cutest boutique hotel...owned by Gloria Estefan....the Casa d'Este. We also had a great visit with dear friends...and new friends. It was a great way to spend my birthday...and the 4th of July.<br />

In early August, MacDaddy had another meeting in Orlando, at the Gaylord. While he worked, I hung out with our son, Music Guy. He and his friend joined me at the hotel for dinner and exploring the massive atrium (we got lost!) The next day, he took me to several of his favorite haunts. It was so much fun!!!</div>

The rest of July and part of August was spent packing up our home of 20+ years. I tossed and donated at least 20 carloads of stuff...and still filled a huge dumpster, a moving van, and a gigantic storage unit. It was a well orchestrated (HA!) move of storing our belongings and packing our cars for a temporary move to St. Augustine. We moved into our condo on Aug. 16 and will stay until November...and maybe longer. This is a great opportunity for us to see if we like living here...</div>

It's been so long since I blogged (with the exception of posting one I wrote months ago). I have missed all of you so much! Sitting for long periods of time is still difficult...and taboo (according to my doctor!), so I have avoided my computer as much as possible, using it only when I needed to do some actual work.</div>

Like many of you, life has become so busy! With trying to sell our house (and keeping it clean!) and making decisions where we want to live for the next couple of years, I have felt a bit overwhelmed. We have a buyer...but the bank is dragging its feet. We are so OVER this! All I want to do is close this chapter of our life and get on with the next. But we wait...knowing God has already settled this matter and we just need to sit back and let Him deal with the mess... We've decided to stay local, for the time being. We love being near our kids and granddaughter. But all these ideas may change. We'll see...</div>

As I mentioned above, I'm still dealing with sciatica, so I don't sit at the computer for long periods of time. That's one of the reasons I have not blogged in awhile... The good news with the sciatica is that I am really exercising and I've lost a lot of weight...and three sizes! And I am getting better each day. My treatments are down to one day per week...and soon, the doctor/adjustments will be twice a month...then once a month. (Think I'll keep going for the massages, though...they feel soooooo good!) Had a bit of a scare this week...the massage therapist noticed a possible clot in my calf...had the sonogram, but have not heard the results, yet. I assume since I was not called on Friday afternoon, that there was no clot...but I will be calling the DR. tomorrow morning to make sure.</div>

In the past couple of months, I have catered two events...a baby shower and an engagement party. It was so much fun planning and researching menu ideas. I used the Billionaire Bacon-Wrapped Chicken (from an earlier post...HUGE hit!) at both parties...along with an assortment of other delectable dishes. Both were successes...and at both events, it was suggested that I make this my business. NO WAY! That would take the fun out of cooking. But I'll do it for special friends... <b><span style="color: #cc0000; font-size: large;">BILLIONAIRE BACON - WRAPPED CHICKEN</span></b></div>

This is so easy to make! Simply cut 4 boneless chicken breasts (about 1 1/2 pounds) into 1 inch cubes. Using 1 pound bacon, cut each strip into 3 pieces. Wrap 1 piece of bacon around 1 cube of chicken and secure with a wooden toothpick. (You may need to stretch the bacon piece a little.) Set aside.<br />

In a bowl, combine 2/3 cup brown sugar, 2 tbsp. chili powder, 1/2 -1 tsp. cayenne pepper. (Adjust to your taste) Dredge each piece of chicken in the sugar/chili powder/pepper mixture. Be sure you cover all sides.<br />
<br />
To bake*...spray a broiler pan/rack with nonstick cooking spray. Place chicken on the rack/tray. Bake at 350 degrees for 25-30 minutes, or until bacon is a bit crispy. Do not overbake! This recipe makes about 15 appetizer servings. Careful, they are addictive!!!<br />

*I baked this on a deep flexipat/perforated baking tray by Demarle at Home. No oils, butter or nonstick sprays are needed. The chicken came out perfectly...AND as it cools, the sugar/spice/bacon drippings harden...as my son says, "Dessert!" It peels right off the pan! The flexipat was easily cleaned with just soap and water. I LOVE DEMARLE PRODUCTS!!!<br />

These are my grandparents...my mom's parents. My grandfather's family was from Spain...and were exiled to Cuba. It was there (Cuba) that my grandfather was born. As a young man, he and his family emigrated to Florida...living in the Ybor City area of Tampa, FL. My grandmother came to America as a young child. She and her brother traveled by ship, from Cicily. Eventually, she moved to the Ybor City area of Tampa. As the story goes, my grandparents met, fell in love and married. The families frowned on the marriage...a Spanish guy and Italian girl. It just wasn't "done", in those days. But the marriage was successful...and produced 10 children.<br />

My mom was a baby...but remembers the storm and being evacuated in a boat, pulled by a horse. Later, this was the spot Mom and her siblings would go "skluking" (the parking spot for dates). This was something she shared just a couple of months ago...(Dementia has robbed her of the present, but stories from the past keep surfacing. And it's fascinating!)</span></td></tr>

My grandfather borrowed $3000 dollars and built this house. It is several blocks away from the coastline, and still standing! It's 90+ years old! Can you believe that 10 children were raised in this home??? In the backyard, my grandfather built another structure...from Mom's description, a dormatory-like building...for the 5 sons. </div>

This was the cigar factory where my grandfather worked. Not only did he roll cigars, he was a reader. He read the Spanish newspapers to the other rollers, as they worked. The factory was a couple of blocks from the family home. In the evenings, when work was done, my mom, her siblings, and the other neighborhood kids would often walk to the factory to meet my grandfather. They would escort him home, singing and hoping for a penny or two to buy "peedalees" from the "peedalee man"...the guy who carried a huge stick filled with coneshaped lollipops. My mom always referred to him as the "peedalee man" because he had a flute which he would blow when he was walking...the sound was pee-da-lee. </div>

Mom celebrated her 95th birthday this past weekend. She was surrounded by all of her children and their spouses. After feasting on her favorite BBQ and chocolate cake, we all gathered around the piano and sang Mom's favorite songs. It was a fun way to celebrate this wonderful woman.</div>

<span style="font-family: Arial, Helvetica, sans-serif; font-size: large;">To make a really great "holder", I use a fluted cookie cutter to cut each wrapper. Then I place it in either a tartlette pan or a mini-muffin pan (I use the Flexipans by Demarle at Home.). These are baked for about 6 minutes at 350 degrees, then popped out of the pans and cooled. When cooled, I fill them, then top with a garnish of coconut, green onion or chives, and chopped peanuts. I often make the wontons a day or so ahead and store them in an airtight container until I am ready to use them.</span></div>

<span style="color: #351c75; font-family: Arial, Helvetica, sans-serif; font-size: large;">1. Preheat the oven to 400 degrees F. In a blender, combing milk, eggs, flour, salt, vanilla and orange zest. (Make sure there are no flour clumps!)</span><br />

<span style="color: #351c75; font-family: Arial, Helvetica, sans-serif; font-size: large;">2. Blend in butter, a little at a time.</span><br />

<span style="color: #351c75; font-family: Arial, Helvetica, sans-serif; font-size: large;">3. Fill the Demarle at Home muffin cups a little less than half full. (If using conventional muffin pans, grease them!) You should get 18-24 cups.</span><br />

<span style="color: #351c75; font-family: Arial, Helvetica, sans-serif; font-size: large;">4. Bake for 15 minutes, or until the pancakes are puffy and golden on top (edges should be slightly browned).</span><br />

<span style="color: #351c75; font-family: Arial, Helvetica, sans-serif; font-size: large;">5. Serve with your favorite toppings.</span><br />

<span style="color: #351c75; font-family: Arial, Helvetica, sans-serif; font-size: large;">1 Tbsp. butter</span><br />

<span style="color: #351c75; font-family: Arial, Helvetica, sans-serif; font-size: large;">(If desired, you can add 2 Tbsp sugar. I did not.)</span><br />

Stir occasionally, to keep from burning and sticking. Simmer 2-3 minutes until slightly thickened. Spoon into the wells of the pancake. Dust with powdered sugar, if desired.</span><br />

<span style="font-size: large;">Picadillo translates to ground meat or hash. It's a dish that just about every culture has in it's culinary libraries. While searching for some recipe suggestions, I found this dish made with everything from ground beef and/or pork, to mangoes and plantains. It is usually served with rice...better yet, ON rice. (My sister-in-law adds raw rice to the dish while it's cooking and tops it with sharp cheddar cheese. She calls her dish "Ranch Style Hash".)</span><br />

<span style="font-size: large;">I always thought my grandmother's and my mother's Picadillo recipes were pretty good...until I tasted my high school Spanish teacher's version. She invited the class to her home and taught us to prepare Picadillo. Oh....I was in heaven! Her version of this delicious dish included lots of green olives and RAISINS. The piquant and sweet tastes, blending with the onions, garlic, and tomatoes set off rockets on my taste buds...and in my soul!!! <span style="font-size: large;">1 large can diced tomatoes (I like to use the boxed tomatoes by Pomi)</span><br />
<span style="font-size: large;">1 small onion, diced</span><br />
<span style="font-size: large;">garlic cloves (I use 3-5), smashed</span><br />
<span style="font-size: large;">olive oil</span><br />
<span style="font-size: large;">1/2 cup green olives w/ pimento </span><br />
<span style="font-size: large;">1/2 cup raisins (I use more)</span><br />
<span style="font-size: large;">rice</span><br />
<span style="font-size: large;">Salt</span><br />
<span style="font-size: large;">Pepper</span><br />
<span style="font-size: large;">Cumin or Crushed Red Pepper (if desired)</span><br />

<i><span style="font-size: large;">* Please note, most recipes for Picadillo are made with "sofrito"...the Hispanic "holy trinity" of onion, garlic and green pepper. I don't use green pepper...It doesn't like me.</span></i><br />

<span style="font-size: large;">In a skillet (I use my electric skillet), saute the onion and garlic in a little olive oil. Add the ground beef and brown it until no longer red. Drain off the excess oils...if desired. Add tomatoes and simmer. Add green olives and raisins...as many as you wish (I like a lot!). You can use the whole olive or slice them. Be sure to use the pimento, too! Season to taste, using salt, pepper and cumin or crushed red pepper (if desired). Simmer at least 30 minutes...better if it cooks longer...best if it sits in the refrigerator for several hours or overnight.</span><br />

<span style="font-size: large;">Serve over rice. I prefer white or brown rice with this dish. (Many of the local Spanish restaurants use yellow rice.)</span><br />

<span style="font-size: large;">To complete your meal, add a salad and some crusty bread (Cuban, if you can get it). I often like to serve plantains with this dish...</span><br />

<span style="font-size: large;">If you have leftovers, try the Picadillo on a pizza crust, topped with sharp cheddar cheese. Or make an empanada pastry, cut into squares and place in a couple of spoonfuls of the picadillo on the dough. Fold into a triangle and seal the edges. Bake these on a Silpat or prepared baking pan until golden brown. </span><br />

Pour into two, greased and floured, 8 inch round pans. Bake according to the directions on the box. Cool in pan for 10 minutes, then invert onto cooling racks.</span></div>

Fold in the powdered sugar. Spread whipped cream on the first layer. Top with sliced strawberries. Top this with the remaining layer of cake. Spread with whipped cream and tip with blueberries.(I cut the Demarle layer in half...spreading the cream between the layers). If desired, add a large dollop of whipped cream in the middle of the top layer, then gently press a large strawberry on top...maybe partially sliced and fanned out.</span></div>

So my maternal grandmother was quite old during my early childhood. What I do remember was the smell of her home...The scent of olive oil warming on the stove. To this day, that smell brings her to mind. Sadly, this grandmother...the one with whom I had slight relationship...spoke very little English, and I was not yet fluent in Spanish. Grandma DelValle was an immigrant...coming over to the US at the young age of 8. If she knew English, she had forgotten most of it during our time together. So...I really did not know her. And I was only 1 of tons of grandchildren. The eldest grandchild was already an "old man" when I came along....</span><br />

(She and my mother disliked each other, immensely.) The most vivid memory is of her telling me to get out of the drainage ditch water...because I might get worms. I was under 5 years when this took place. But I hear wonderful stories of Bama, from my sister. Sis talks about white gloves and pearls, hats and tea. How I wish I had those memories...</span><br />

Other than the 1-2 visits a year, during their early years, my mom (94) did not see the guys, and she never talked with them on the phone. (Skype was not available then...but Mom would probably not have used it.) By the time we relocated to Florida...and lived less than 20 miles from Mom, she and Dad had retired and spent most of the years traveling or staying in the mountain house. While I don't fault them for enjoying their retirement, I am sad that my boys never got to see the crazy, fun side of my mother...of the lady who used to be the instigator of all things mischief, according to her siblings...of the lady who could warm your heart when she smiled. Today, although she is still living, dementia has taken such a strong hold on her mind. She tries, but does not remember the boys...or me.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">My husband's mother saw the boys even less frequently than my mom... Gmac visited us once, when we lived in PA...after that trip, she was confined to the home due to her husband's health (MS). After his death, she refused to come visit...even with the offer of one of us accompanying her on the plane or driving her down to FL. She maintained that it took her 45 years to get out of FL, and that she would never return. So she even missed the weddings of two of our boys, and she has not seen her great-granddaughter. We've visited as much as possible, but the strong relationships were never there...And now, with her health concerns, it's difficult for her to be with "strangers".</span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">Now, I am a grandmother....and I fully intend to be a part of the life of my granddaughter...and any future grandchildren I might have. (See...those math lessons are useful, after all!) I'll use my skin (fair) as an example...If I am in the sun without protection, my skin begins to turn pink within 10 minutes of exposure. So...if I used an SPF 30 product, I would get 300 minutes (30 x 10 min) of protection (about 5 hours). Even when the sun product says 8 hours of protection... And that protection is also dependent on water/sweat/etc. factors.</span><br />

<span style="font-family: Arial, Helvetica, sans-serif; font-size: large;">I use a COMPLETE Suncare product...protection from UVA 1 and 2 and UVB rays...every day. If I am in the water, I use one specifically for that purpose. And, yes, I still get a tan...a healthy golden glow. (Don't forget to protect your hands, ears, and head!)</span><br />
