HEALTHY BREAKFAST FOODS

I HATE BREAKFAST...unless it's brunch! I am not one of those get-up-and-get-going kind of gals. I move r...e.....a.....l.....l.....y  s....l.....o.....w most mornings, and the thought of fixing breakfast - and EATING breakfast early in the day - makes me queasy. But, as we all know, breakfast is the most important meal of the day.

So I have come up with a wonderful solution...mini omelet cups.  I bake once, then bag to keep in the freezer, just waiting to be popped into the microwave for just a minute. The recipe is simple...and in my flexi-muffin pan, it's super easy cleanup! Best of all, I can eat when I want...and MacDaddy can have his EARLY breakfast with little fuss... You just pop the Omelet Cup into the microwave for a minute or so, and you're good to go...

Omelet Cups

6-8 eggs
swiss cheese (or any other cheese), grated
fresh spinach
a splash of milk
***You can add bacon, sausage or ham, if desired.

With a whisk, scramble the eggs in a mixing bowl. Set aside.  Put a little grated cheese in each muffin cup. (If you are not using a flexi-pan, be sure to oil or spray the muffin cups). Top with a little freshly chopped spinach. Pour egg mixture into each cup...about 3/4 of the way to the top. Bake in a 350 degree oven for 10 - 15 minutes, or until lightly golden on top. Remove from the over, let cool in the pan for a few minutes. Remove from muffin tray and either eat, or cool on a cooling rack. Enjoy... 
If freezing, store in an airtight container or a freezer bag. (Put a little water into any empty well...to protect your pan)

My other "new" breakfast - lunch - snack food is a whole grain English muffin with a little cream cheese, some sugarless strawberry preserves and sliced fresh strawberries. Not only is this delicious, it's HEALTHY!

For those of you who are not familiar with Flexi-pans....these are professional silicone and woven glass baking pans which require no oil, butter, non-stick sprays.
